Spring Lentil Soup

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 1 garlic clove, minced
  • 4 carrots, peeled and halved lengthwise and cut into 2 inch pieces (about 1 1/2 c)
  • 6 boiled baby red potatoes
  • 1 cup lentils
  • 1/4 lb green beans, cut into 1-inch pieces (1 c)
  • 1/2 cooked lamb tenderloin, cut into 1/2-inch pieces
  • 6 cups chicken stock
  • 3 plum tomatoes, cut into 1/2-inch pieces

Recipe

  • 1 in a large saucepan, heat the oil over medium heat. add the onion and garlic and cook until softened but not browned, 2 to 3 minutes.
  • 2 add the remaining ingredients, except the tomatoes, and bring to a boil. reduce heat to low, cover, and simmer until the lentils are tender, 25 to 30 minutes.
  • 3 add the tomatoes and simmer 5 more minutes.
