Tofu Bowl

Ingredients
- Servings: 5
- 1 1/2 cups brown rice
- 16 ounces tofu, cubed
- 2 cups water
- 1 cup lentils, dry
- 3 cups vegetables, chopped
- 1 teaspoon garlic powder
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 tablespoon herbes de provence
Recipe
- 1 combine all ingredients in a large soup pan and heat over medium heat.
- 2 stir frequently and simmer for 1 hour. add more water if needed.
- 3 divide into 5 tupperwear bowls and enjoy for lunch!
