Tomato-vodka Soup

Ingredients

- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 medium onions, sliced
- 2 small garlic cloves, smashed and peeled
- 1 (32 ounce) container vegetable broth (4 cups)
- 2 (28 ounce) cans italian plum tomatoes, drained
- 1 (15 ounce) can tomato sauce
- 1/4 cup vodka
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 cups half-and-half
Recipe
- 1 in a skillet, saute onions and garlic in olive oil and butter over medium high heat for 1 minute in a slow cooker, add vegetable broth, tomatoes, tomato sauce, vodka, salt and sugar. then add the sauteed onions and garlic. cover and cook on high heat for 5 hours.
- 2 puree the soup in batches, then stir in half-and-half.
- 3 cover and cook for an addition 20 minute on low heat setting.
