Split Pea Soup With Fresh Peas And Potatoes

Ingredients

  • Servings: 4
  • 2 teaspoons extra virgin olive oil
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 2 small red potatoes, cubed
  • 1 teaspoon cumin
  • black pepper, 1-2 turns of grinder
  • 1 cup split peas
  • 4 cups water or 4 cups vegetable stock
  • 1 large bay leaf
  • 1/2 cup fresh peas (frozen okay)
  • 1 teaspoon sea salt
  • 1 tablespoon fresh dill (optional) or 1 teaspoon dried dill (optional)

Recipe

  • 1 saute chopped onion in oil until they begin to soften.
  • 2 add celery, carrot, potatoes, cumin, and pepper; saute 5-7 minutes.
  • 3 add split peas, water, and bay leaf.
  • 4 bring to a boil, lower heat, and simmer for 1 1/2 hours.
  • 5 add remaining ingredients; stir. cook for a few more minutes until peas are tender. enjoy!
