Split Pea Soup With Fresh Peas And Potatoes

Ingredients

- 2 teaspoons extra virgin olive oil
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 2 small red potatoes, cubed
- 1 teaspoon cumin
- black pepper, 1-2 turns of grinder
- 1 cup split peas
- 4 cups water or 4 cups vegetable stock
- 1 large bay leaf
- 1/2 cup fresh peas (frozen okay)
- 1 teaspoon sea salt
- 1 tablespoon fresh dill (optional) or 1 teaspoon dried dill (optional)
Recipe
- 1 saute chopped onion in oil until they begin to soften.
- 2 add celery, carrot, potatoes, cumin, and pepper; saute 5-7 minutes.
- 3 add split peas, water, and bay leaf.
- 4 bring to a boil, lower heat, and simmer for 1 1/2 hours.
- 5 add remaining ingredients; stir. cook for a few more minutes until peas are tender. enjoy!
