Sherried Winter Squash Soup

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 1 1/4 quarts vegetable stock
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 large butternut squash, peeled seeded and cubed
  • 4 medium potatoes, cubed
  • 1/2 cup chopped onion
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 cup chopped celery
  • 1/2 cup chopped parsley
  • 2 -4 tablespoons dry sherry
  • salt and pepper

Recipe

  • 1 combine all ingredients except parsley, sherry, salt and pepper in a slow cooker.
  • 2 cook on high 4-5 hours, adding parsley during last 20 minutes.
  • 3 stir in sherry, salt and pepper to taste before serving.
