Sherried Winter Squash Soup

Ingredients
- Servings: 4
- 1 1/4 quarts vegetable stock
- 1 (28 ounce) can diced tomatoes, undrained
- 1 large butternut squash, peeled seeded and cubed
- 4 medium potatoes, cubed
- 1/2 cup chopped onion
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 cup chopped celery
- 1/2 cup chopped parsley
- 2 -4 tablespoons dry sherry
- salt and pepper
Recipe
- 1 combine all ingredients except parsley, sherry, salt and pepper in a slow cooker.
- 2 cook on high 4-5 hours, adding parsley during last 20 minutes.
- 3 stir in sherry, salt and pepper to taste before serving.
