Sausage Potato And Kale Soup

Ingredients
- Servings: 8
- 1 lb sausage
- 1 tablespoon minced garlic
- 1/2 cup onion
- 6 potatoes, quartered and sliced
- 1 tablespoon chicken base
- 6 cups water
- 1 (12 ounce) can evaporated milk
- 1 bunch kale, chopped, stems removed
- salt and pepper
Recipe
- 1 brown the sausage in a dutch oven or large soup pot.
- 2 add onion and garlic and saute until onions are opaque
- 3 add potatoes.
- 4 add chicken base.
- 5 cover ingredients with water.
- 6 add evaporated milk, cover.
- 7 cook on medium until potatoes are tender.
- 8 add kale, cover and simmer on low 5 minutes.
- 9 add salt and pepper to taste.
