Tamal En Casuela: Cuban Tamale Soup

Ingredients

  • Servings: 6
  • 1 lb lamb (cubed)
  • 1/3 cup tomato sauce
  • 2 garlic cloves (minced)
  • 1/4 cup dry wine
  • 1 lemon
  • 2 cups cornmeal
  • 1/4 cup olive oil
  • 3 cups water
  • 1 onion (finely chopped)
  • 1 tablespoon salt
  • 1 green pepper (finely chopped)
  • 1/4 teaspoon black pepper

Recipe

  • 1 cut lamb into cubes and marinate in lemon and garlic.
  • 2 brown lamb and add enough olive oil to simmer with onion, green pepper, tomato sauce, and wine.
  • 3 mix cornmeal and water thoroughly, then strain.
  • 4 add strained mixture to previous ingredients.
  • 5 cook on stove for one hour stirring occasionally.
  • 6 add salt and pepper to taste.
