Spinach-onion Soup

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 (10 ounce) package frozen chopped spinach
  • 5 chicken bouillon cubes
  • 5 cups boiling water
  • 4 tablespoons butter
  • 3/4 cup green onion, sliced
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon nutmeg

Recipe

  • 1 in a pot dissolve 1 bouillon cube in 1 cup boiling water.
  • 2 add frozen spinach, cook until done.
  • 3 drain spinach, reserving liquid.
  • 4 in a frying pan combine butter, onions and garlic.
  • 5 cook slowly for 10 minutes.
  • 6 add spinach.
  • 7 cook, stirring constantly, for 3 minutes.
  • 8 add spinach liquid.
  • 9 in a bowl dissolve remaining bouillon cubes in remaining boiling water.
  • 10 add mixture to pot.
  • 11 add pepper and salt.
  • 12 bring to a boil.
  • 13 reduce heat.
  • 14 cook for 15 minutes longer.
  • 15 garnish with nutmeg.
