Spinach-onion Soup

Ingredients
- Servings: 6
- 1 (10 ounce) package frozen chopped spinach
- 5 chicken bouillon cubes
- 5 cups boiling water
- 4 tablespoons butter
- 3/4 cup green onion, sliced
- 1/2 teaspoon garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon nutmeg
Recipe
- 1 in a pot dissolve 1 bouillon cube in 1 cup boiling water.
- 2 add frozen spinach, cook until done.
- 3 drain spinach, reserving liquid.
- 4 in a frying pan combine butter, onions and garlic.
- 5 cook slowly for 10 minutes.
- 6 add spinach.
- 7 cook, stirring constantly, for 3 minutes.
- 8 add spinach liquid.
- 9 in a bowl dissolve remaining bouillon cubes in remaining boiling water.
- 10 add mixture to pot.
- 11 add pepper and salt.
- 12 bring to a boil.
- 13 reduce heat.
- 14 cook for 15 minutes longer.
- 15 garnish with nutmeg.
