Yummy Chicken Enchiladas

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 lb chicken breast (tenders are fine)
  • 1 (8 ounce) can cream of mushroom soup
  • 1 (8 ounce) container sour cream
  • 2 cups of shredded cheese
  • 10 small tortillas
  • salsa

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 boil chicken until done.
  • 3 shred chicken when cool and set aside.
  • 4 mix cream of mushroom soup and sour cream.
  • 5 add salsa to sour cream mixture until it is pinkish in color (bowl #1).
  • 6 set aside 1 cup of mixture in a seperate bowl (bowl #2).
  • 7 add the shredded chicken to bowl #1 and mix well.
  • 8 scoop mixture into tortillas and roll into enchiladas.
  • 9 place in a greased pan.
  • 10 pour mixture from bowl #2 over the enchiladas.
  • 11 top with shredded cheese.
  • 12 bake for about 20 minutes or until the cheese is completely melted and the edges of the tortillas are slight brown in color.
