Sophisticated Grilled Cheese

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 1
  • 1/2 vidalia onion, diced
  • cayenne pepper
  • black pepper
  • 2 slices whole wheat bread (i use low-cal bread)
  • 1 slice cheddar cheese (i use borden's fat free)
  • 1 slice swiss cheese (borden's fat free)
  • 8 leaves spinach

Recipe

  • 1 heat a sprayed nonstick skillet over medium-high.
  • 2 sauté onion; add spices to taste.
  • 3 when softened, dump onions out of skillet and set aside.
  • 4 spray pan again.
  • 5 put both slices of bread on skillet.
  • 6 place one cheese slice on one and one on the other.
  • 7 let cheese melt.
  • 8 place spinach evenly on one slice and pile onions on other.
  • 9 sandwich the two slices together and continue cooking to desired doneness.
  • 10 munch away!
  • 11 i suggest heating a little tomato sauce and using as a dip or use tomato soup (or my gazpacho from my rainbow roasted salsa).
