Split Pea Soup

Total Time: 2 hrs 5 mins Preparation Time: 5 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1 (1 lb) package dried split peas
  • 1 cup diced carrot
  • 1 cup finely chopped onion
  • 1/2 cup pealed diced parsnip
  • 1/2 cup chopped celery
  • 1 teaspoon dried thyme
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 5 1/2 cups chicken broth
  • 3 cups water
  • 2 lbs smoked ham hocks
  • 1 teaspoon curry

Recipe

  • 1 combine peas, carrotts, onion, parsnip, celery, thyme, salt, pepper, broth and the water. add ham hocks, submerging them in mixture.
  • 2 cover, cook on low heat setting for 2 hours until peas are very soft.
  • 3 remove ham hocks; skim fat from surface of soup. trim fat from hocks. cut meat from bones and shread; stir into soup. ladle into 6 bowls. garnish each serving with garlic croutons and chopped parsley.
