Split Pea Soup

Ingredients

- 1 (1 lb) package dried split peas
- 1 cup diced carrot
- 1 cup finely chopped onion
- 1/2 cup pealed diced parsnip
- 1/2 cup chopped celery
- 1 teaspoon dried thyme
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 5 1/2 cups chicken broth
- 3 cups water
- 2 lbs smoked ham hocks
- 1 teaspoon curry
Recipe
- 1 combine peas, carrotts, onion, parsnip, celery, thyme, salt, pepper, broth and the water. add ham hocks, submerging them in mixture.
- 2 cover, cook on low heat setting for 2 hours until peas are very soft.
- 3 remove ham hocks; skim fat from surface of soup. trim fat from hocks. cut meat from bones and shread; stir into soup. ladle into 6 bowls. garnish each serving with garlic croutons and chopped parsley.
