Souped Up Split Pea Soup

Total Time: 5 hrs 15 mins Preparation Time: 15 mins Cook Time: 5 hrs

Ingredients

  • Servings: 8
  • 1 ham hock
  • 1 lb dried split peas
  • 1/2 cup dried red lentils
  • 1 cup carrot, chopped
  • 1/3 cup baby corn, chopped
  • 1/4 cup pine nuts, chopped
  • 1 teaspoon garlic, chopped
  • 1 medium onion, chopped
  • 1/2 teaspoon seasoning salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried tarragon
  • 8 cups chicken broth

Recipe

  • 1 put carrots, baby corn, onion, and pine nuts in the food processor and chop.
  • 2 put all ingredients except chicken broth in the crock pot.
  • 3 add 6 cups of the chicken broth.
  • 4 cook on high for 3 hours.
  • 5 turn down to low for another 2 hours and add the remaining 2 cups of chicken broth (if you like it thick or thinner adjust the broth to your preference).
