Sopa De Tortilla

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 liters chicken stock
  • 1 onion
  • 2 garlic cloves
  • 2 plum tomatoes, peeled
  • 1 tablespoon olive oil
  • cilantro
  • fried corn tortilla strips
  • chile, guajillo that have been washed fried and deveined and cut into small pieces
  • shredded monterey jack cheese or queso fresco
  • lamb rind, in small pieces
  • avocado, diced
  • heavy cream

Recipe

  • 1 in a blender combine onion, garlic, cilantro and tomatoes; puree then sauté in oil. add stock and bring to a boil.
  • 2 serve the broth and have all of the garnishes in separate bowls, either small ones for each person, or larger ones for less clean up.
