potato (velveeta®) cheese soup
Ingredients

- 8 cups water
- 2 pounds shredded potatoes
- 1 (1 pound) loaf processed cheese food (such as velveeta®), cubed
- 1/4 cup chopped onion, or to taste
- 4 cubes chicken bouillon
- 1 teaspoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons seasoning blend (such as tony chachere's®)

- combine the water, potatoes, processed cheese, onion, bouillon, parsley, salt, pepper, and seasoning in a large pot. bring to a boil over high heat. reduce heat to medium-low; cover and simmer until the potatoes are tender, about 30 minutes.
