potato (velveeta®) cheese soup

Ingredients

  • Servings: 8
  • 8 cups water
  • 2 pounds shredded potatoes
  • 1 (1 pound) loaf processed cheese food (such as velveeta®), cubed
  • 1/4 cup chopped onion, or to taste
  • 4 cubes chicken bouillon
  • 1 teaspoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons seasoning blend (such as tony chachere's®)

    Preparation Time: 20 mins Cook Time: 35 mins Ready Time: 55 mins

  • combine the water, potatoes, processed cheese, onion, bouillon, parsley, salt, pepper, and seasoning in a large pot. bring to a boil over high heat. reduce heat to medium-low; cover and simmer until the potatoes are tender, about 30 minutes.
