- 1 heat olive oil in soup pot over medium to medium-high heat. add chorizo or other meat, cook for 1 or 2 minutes, then add vegetables, bay leaf, salt and pepper. cook for 7 to 8 minutes, or until softened, stirring frequently. add chickpeas and paprika. stir in tomatoes, hot sauce, and stock.
- 2 raise heat to high and bring soup to a boil. reduce heat and simmer for 10 minutes, or until potatoes are tender.
- 3 place 1/2 cup of the bread cubes into each serving bowl and drizzle with olive oil. ladle the soup over the bread and garnish with chopped parsley or cilantro.

- 4 large onions, sliced very thin into rings
- 3 garlic cloves, chopped
- 3 3/4 cups hot chicken stock or 3 3/4 cups ham stock
- 4 slices ciabatta or 4 slices other italian bread
- 3 tablespoons butter
- 2 3/4 ounces gruyere or 2 3/4 ounces cheddar cheese

- 1 dry fry the pancetta in a large saucepan for 3-4 minutes until it begins to brown.
- 2 remove the pancetta and set aside until required add the oil and to the pan and cook the onions and garlic over high heat for 4 minutes.
- 3 reduce the heat, cover and cook for 15 minutes until the onions are lightly caramelized add the stock to the saucepan and bring the mixture to a boil.
- 4 reduce the heat and leave the mixture to simmer, covered, for about 10 minutes toast the slices of bread on both sides, under a preheated broiler, for 2-3 minutes or until golden.
- 5 spread the ciabatta with butter and top with the gruyere or cheddar cheese.
- 6 cut the bread into bite sized pieces add the reserved pancetta back to the soup and season with salt and pepper to taste.

- 1 tablespoon light olive oil
- 1 large onion, chopped
- 2 large garlic cloves, crushed and chopped

- 2 teaspoons crushed chipotle chili pepper flakes (flakes not powder)
- 2 quarts water (8 cups)
- 1 lb ham steak, chopped into bite size chunks (i like cook's brand)
- 1 (28 ounce) can whole tomatoes with juice, undrained
- 1 (10 ounce) can ro-tel tomatoes, undrained (use ro-tel original)
- 1 1/2 tablespoons light brown sugar
- 1 -2 tablespoon sour cream (optional)

- 1 place your beans in a big bowl and cover with water 2 or 3 inches above them and soak overnight or for at least 8 hours.
- 2 drain the beans and set them aside in a collander.
- 3 in a large soup pot, heat the olive oil on medium high heat.
- 4 saute the onions and garlic with the lemon juice and crushed chipotle peppers until the onion is soft. (about 2 minutes).
- 5 add the beans and water then stir.
- 6 bring to a boil, add the ham, then reduce heat to a medium simmer.
- 7 simmer for 1 hour, uncovered.
- 8 add the tomatoes with their juice and break them up a little in the soup with a spoon.
- 9 add the ro-tel with its juice and the brown sugar. stir, then turn heat down to a low simmer, uncovered, for 1 more hour or until beans are al dente to your taste.

- 1 brown the sausage in the bottom of a large stock pot, breaking it up with a utensil as you go.
- 2 once meat is no longer pink, add onions and continue to saute until they are translucent (if using meat substitute, you may wish to add a few teaspoons of olive oil to prevent sticking).
- 3 add potatoes and garlic to the pot and stir to incorporate them. once garlic becomes fragrant, add the vegetable stock and red pepper (if using) and bring to a boil.
- 4 once potatoes are tender, add chopped kale and cover the pot. once the kale has wilted, remove the pot from heat, add milk and season with salt and pepper.
