Laura's Quick Slow Cooker Turkey Chili

Ingredients

  • Servings: 8
  • 1 tablespoon vegetable oil
  • 1 pound ground turkey
  • 2 (10.75 ounce) cans low sodium tomato soup
  • 2 (15 ounce) cans kidney beans, drained
  • 1 (15 ounce) can black beans, drained
  • 1/2 medium onion, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon red pepper flakes
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon ground cumin
  • 1 pinch ground black pepper
  • 1 pinch ground allspice
  • salt to taste

    Ready Time: 4 hrs 15 mins

  • heat the oil in a skillet over medium heat. place turkey in the skillet, and cook until evenly brown; drain.
  • coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
  • cover, and cook 8 hours on low or 4 hours on high.

Black Bean Vegetable Soup

Ingredients

  • Servings: 6
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 carrots, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 4 cups vegetable stock
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 (8.75 ounce) can whole kernel corn
  • 1/4 teaspoon ground black pepper
  • 1 (14.5 ounce) can stewed tomatoes

  • in large saucepan, heat oil over medium heat; cook onion, garlic, and carrots, stirring occasionally, for 5 minutes or until onion is softened. add chili powder and cumin; cook, stirring, for 1 minute. add stock, 1 can of the beans, corn, and pepper; bring to boil.
  • meanwhile, in food processor or blender, puree together tomatoes and remaining can of beans; add to pot. reduce heat, cover, and simmer for 10 to 15 minutes or until carrots are tender.

Easy Enchilada Casserole

Ingredients

  • Servings: 8
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 4 cooked skinless, boneless chicken breast halves, chopped
  • 8 ounces sour cream
  • 1/2 cup chopped green onions
  • 3 cups salsa
  • 1 (4 ounce) can diced green chiles
  • 4 cups shredded monterey jack cheese
  • 12 (8 inch) flour tortillas

Recipe

  • preheat oven to 350 degrees f (175 degrees c).
  • in a medium bowl combine the soup, chicken, sour cream and green onions. mix together. in another small bowl combine the salsa and green chile peppers and mix.
  • in a lightly greased 9x13 inch baking dish layer as follows: 4 flour tortillas (cover the bottom of the dish), 1/2 of the chicken mixture, 1/2 of the salsa mixture, 1 1/2 cups of shredded cheese. repeat layers. add another layer of 4 tortillas and top with the remaining 1 cup of cheese. cover and bake in the preheated oven for 55 minutes. uncover and bake for an additional 5 minutes, until the cheese is melted on top. let stand 5 minutes before cutting.

grandma's green bean casserole

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1/4 cup onion, diced
  • 1 cup sour cream
  • 3 (14.5 ounce) cans french style green beans, drained
  • 2 cups shredded cheddar cheese
  • 1/2 cup crumbled buttery round crackers
  • 1 tablespoon butter, melted

  • preheat oven to 350 degrees f (175 degrees c).
  • melt 2 tablespoons butter in a large skillet over medium heat. stir in flour until smooth, and cook for one minute. stir in the salt, sugar, onion, and sour cream. add green beans, and stir to coat.
  • transfer the mixture to a 2 1/2 quart casserole dish. spread shredded cheese over the top. in a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
  • bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

  • 1 tablespoon olive oil
  • 2 cups chopped onion
  • 2 cups chopped carrot
  • 2 cups finely chopped celery
  • 1/2 tablespoon minced garlic
  • 1 cup yellow split peas
  • 1 cup green split peas
  • 8 cups fat-free chicken broth
  • 1 1/2 teaspoons salt-free seasoning blend
  • 1 teaspoon salt

  • in a large pot or dutch oven over medium heat, heat olive oil. cook onion, carrot, celery and garlic until onion is translucent. stir in yellow and green split peas, broth, seasoning and salt. cover, bring to a boil, then reduce heat and simmer 2 1/2 hours, stirring frequently. puree with a blender or food processor. return to pot, heat through, and serve.

  • 1 (15 ounce) can black beans
  • 1 (10 ounce) can diced tomatoes with green chile peppers, drained

  • open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. pour everything into a large saucepan or stock pot. simmer over medium heat until chicken is heated through.

  • 1 onion, chopped
  • 1/4 cup olive oil
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 (14.5 ounce) can crushed tomatoes
  • 2 cups dry lentils
  • 8 cups water
  • 1/2 cup spinach, rinsed and thinly sliced
  • 2 tablespoons vinegar
  • salt to taste
  • ground black pepper to taste

Recipe

  • in a large soup pot, heat oil over medium heat. add onions, carrots, and celery; cook and stir until onion is tender. stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
  • stir in lentils, and add water and tomatoes. bring to a boil. reduce heat, and simmer for at least 1 hour. when ready to serve stir in spinach, and cook until it wilts. stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.
