Turnip And Pear Soup

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 1 medium onion, chopped
  • 1 tablespoon vegetable oil or 1 tablespoon butter
  • 3 medium-large turnips, peeled and chopped (about 3 cups)
  • 3 large pears, peeled, cored and chopped (about 3 cups)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1 1/4 cups pear juice or 1 1/4 cups apple juice
  • fresh ground black pepper, to taste
  • shredded radish
  • raspberries

Recipe

  • 1 saute onion in butter or oil, until translucent.
  • 2 add chopped turnips, apples and thyme.
  • 3 saute for 10 minutes, stirring frequently.
  • 4 add fruit juice and cook on low heat until turnips are tender.
  • 5 in a blender, food processor, or using a stick blender, puree until thick and smooth. add black pepper to taste.
  • 6 serve with optional garnishes, if desired.
